Easy Vegan Chocolate Molten Cake

Easy Vegan Chocolate Molten Cake

INGREDIENTS:

Dry Ingredients:

  • 4 Tablespoon all purpose flour

  • 3 Tablespoon powdered sugar

  • 2 Tablespoon cocoa powder

  • 1/2 Teaspoon instant coffee grounds

  • 1/4 Teaspoon baking powder

  • 1 Chunk of vegan chocolate

Wet Ingredients:

  • 3 Tablespoon melted vegan butter or cooking oil (canola, corn, vegetable)

  • 5 Tablespoon plant-based milk (I like to use vanilla soy)

  • 1 Teaspoon vanilla essence

  • 2 Teaspoon water

INSTRUCTIONS:

Molten Cake Preparation:

  1. Used a microwave safe mug to mix and cook the cake. Alternatively, you can used a mug and transfer the mixture into a ramekin, like I did.

  2. If using a ramekin, make sure to line the inside of it with either butter or cooking oil. This will allow you to remove the cake when it is done, easily.

  3. Place the all purpose flour, powder sugar, cocoa powder, coffee grounds, and baking powder into the mug. 

  4. Stir the dry ingredients thoroughly.

  5. Add the melted butter/cooking oil, plant-based milk, and vanilla essence to the mug.

  6. Stir the contents of the mug thoroughly until you have a smooth consistency.

  7. If you are using a ramekin, pour the contents of the mug into the ramekin. If using the same mug, proceed to the next step.

  8. Add the chunk of vegan chocolate to the center of the mug or ramekin.

  9. Now, place the mug or ramekin into the microwave and cook for approximately 1:30 (1 minute and 30 seconds) on high.

  10. When done, remove the mug or ramekin and poke the one side of the cake with a toothpick to determine whether it is fully cooked.

  11. If it needs further time, you can return the cake to the microwave and cooked for another 15-30 seconds.

  12. If the cake is in a mug, allow it to cool a bit before eating it.

  13. If the cake is in a ramekin, you can place it upside down on a small plate and tap the top of it a few times to allow the cake to rest on the plate. Be careful, the ramekin may be extremely hot.

  14. If you wish you can add powdered sugar to the top of the cake for some aesthetics.

  15. Enjoy!

This is an easy yet tasty cake recipe. You are free to add more than one chunk of chocolate to the cake, but I usually find that one piece does the trick. For an added appeal, I tossed some vegan chocolate syrup on the plate around the cake. What I love about this recipe the most is it only takes a few minutes to make. This comes in handy when I’m craving some sweets and don’t want to be in the kitchen too long.
